a summer recipe 3 ways + a great way to save

Today I’m coming to you with an awesome summer recipe, grilled corn “salsa” (calling it that because I’m not sure what else to call it!) that you can serve multiple ways. This is one of my favorite warm weather staples…I usually make a batch a week! You will need:

  • 3 ears of corn, grilled and then taken off the cob
  • 1 bag of small tomatoes (I used a mixed variety bag) halved or quartered
  • 1 can of black beans
  • 2-3 ripe avocados, diced
  • Small red onion (optional) diced
  • Chopped cilantro
  • Salt and pepper
  • Lime juice to taste (I’d say 2 tablespoons or so)

This is basically the easiest recipe ever because you just mix everything together in a large bowl! It’s not necessarily the prettiest but it’s definitely so delicious! If you are eating it right away, stir in the avocado along with all other ingredients. However, if you’re making a big batch to have throughout the week (which is what I recommend!), just add avocado to the amount you are eating at any given time so it doesn’t go bad.

Now for the fun part – all of the different ways you can eat this delicious concoction!

Snack: chips & salsa
On most afternoons when Grey is napping, you can find me looking for a snack. This is definitely a go to! So fresh and healthy minus the chips 🙂

Lunch: corn salsa salad
For lunch, this salsa tastes great on top of a salad with cheese. Since it’s only seasoned with lime juice, salt and pepper, you can even add a little dressing. I find that it doesn’t even need it though!

Dinner: grilled chicken with corn salsa
For a full meal, we serve this salsa on top of grilled chicken with rice. Because of the ingredients like beans and avocado, it’s so filling. Grey loves it too!
